固定炉灶，有土灶和砖灶两种，灶身由灶门、灶膛、灶台、灶眼及烟筒等组成，多以柴草为燃料，是古代烹饪的主要炉具。可移动灶个体较小，多以陶或金属制成。在新石器时代已有陶制的炉与连釜灶等。春秋战国以后出现了多种以炭为燃料的铜炉、铁炉及火盆，可供烹饪和取暖。
